Back to school… back to re-al-i-ty.
Do your kiddos come home extra tired and famished from school these first few weeks like mine does? I like having a hearty after-school snack ready (or a packed snackbox if I know she has sports’ practices soon thereafter).
My family absolutely LOVES Cosmic Crisp® apples — they’re a hybrid between Honeycrisp and Enterprise apples, grown exclusively in Washington state. They are sooooo juicy and delish — and they’re naturally slow to brown (or oxidize), making them perfect for lunchboxes and prep-ahead snacks. — And, they even won the 2023 Good Housekeeping Snack Award in the Powerhouse Produce category!
To create a balanced snack, I like to pair apples with a high protein dip, like this one made with cottage cheese, apple butter, salted caramel sauce, ground flax and chia seeds, and some whipped cream!

Speaking of apple “fries,” we love crinkle-cutting all the things (like watermelon, cantaloupe, carrots, even avocado!) — because it just adds a bit of cuteness and whimsy with minimal effort. Here is a link to the cutter we use (affiliate link).
You can also serve the apple fries and dip as an after-school snack on a plate.

1Cosmic Crisp applecore removed, then crinkle-cut or sliced

1 food processor
Method
Combine the cottage cheese and apple butter in a food processor and blend until smooth. Then add that mixture to a medium mixing bowl. Stir in remaining ingredients. Serve with crinkle-cut (or sliced) Cosmic Crisp apples.
